In just over 2 months my Husband and I will be returning to wonderful Lone Star state of Texas (unless the Lord surprises us by calling us somewhere else)! The past 6 months here at the Institute have been incredible. We have had some of the most amazing speakers and teachers pour their wisdom into us and I could not be more thankful for the time we have had here. While I am going to miss being surrounded by such wisdom, I cannot wait to have a full kitchen again (and to finally put those wedding gifts to good use)! Caleb and I have already begun thinking of all the foods we want to make. We are in dire need of a detox, vegetables, and just all around clean food. Being healthy while here has been quit difficult and I am beginning to feel a bit sluggish. Anyone have a favorite detox, healthy blog, or favorite clean meal? These delightful light treats will be in my kitchen soon (or a more healthy variation of them):
Zucchini Bites
Asparagus w/ Balsamic Tomatoes
Cauliflower Pops
Oven Roasted Cabbage
Spaghetti Squash Lasagna
Ratatouille
