The other day I shared with you guys how I am determined to stick to my clean eating. And after only one day I have already realized how difficult this is going to be. If my Husband and I were living in a normal situation (i.e. in a regular home with a kitchen and not living at the Institute) this would be much easier. You see, here at the Institute we have a cook who prepares meals for us each day. While this is wonderful and such a blessing- most of the meals are not what I would consider to be healthy. So, in an attempt to prepare for success my Husband and I plan on going to a cabin for a weekend to use the kitchen and prepare a plethora of meals that we can freeze. So now I need your help. Any suggestions on healthy meals that are freezer friendly and heat up in a microwave? So far my top contenders are a lemon/rosemary chicken and lemon/dill salmon with sides of broccoli, asparagus, and cauliflower. Not sure if any of it freezes well though… Tips?!

March 7, 2013 at 11:17 amSoups freeze really well. When I was a dancer, I would make a cabbage soup with tons of vegetables once a week in a big crock pot, and have it for at least one of my meals a day. Made things simple and ensured I ate plenty of vegetables.

March 11, 2013 at 10:19 amHave you thought about a crock pot? All it takes is an outlet, plug it in in the morning and then dinner is ready when you get home. I use mine 3-4 times a week. You can even use it during the night and have steel cut oats, or other oatmeal breakfasts ready for you when you wake up!
