Our Favorite Apple Recipes

As you may have seen, we went apple picking recently and we are still only half way through our bag of hand picked apples! So in an attempt to enjoy all of the apples before they go bad, we’ve been trying a plethora of different apple recipes! While all of the recipes we’ve tried have been good, there are a couple recipes we’ve agreed were the winners! These are our two favorite apple recipes this fall.

First, for a quick afternoon or evening sweet tooth, I’ve been slicing up apples and baking them with some cinnamon and a pinch of brown sugar on them. Easy and decently healthy! Simply preheat the oven to 400 and bake them for about 15 minutes. And if I really wanted to spice it up, we add them on top of a couple scoops of vanilla ice cream! It’s seriously divine!

The second recipe we’ve been loving is for mini apple pies. In a bowl combine small slices of apples {think small squares}, brown & white sugar, cinnamon and nutmeg. The longer this apple combo sits, the better the flavor!  Then line a cupcake tray with Pillsbury pie crust dough and fill them with the apple filling. Put a small slice of butter in the middle of the filled mini pie. Cover the mini pie with the remaining pie crust dough. Bake the pies for 18-22 minutes. Then enjoy! They are so so so good! And the perfect alternative to a full pie!
